Quite simple really either a) just start typing the name of the person you want in the "to" field and it should do auto complete if the names are in your address book. or b) if you open the addresses dialog select all the names you want then hit the "To:", "Cc:", or "Bcc:" button in the toolbar of that window and the names will be added to the appropriate field.
