I use and am quite happy with a Jabra Halo headset. There are a few reviews on line. In terms of voice over however, I can not really recommend its use. This is I believe because of a Apple issue.
Essentially the problem is that the connection drops to save power and then a half word of text does not get spoken as the BT connection is reestablished. It works great with my Windows Mobile phone and CF MobileSpeak 4, as a listening device for iTunes, and for Skype.
