If you're going to be listening to your audio books on your iPod or in iTunes, then the easiest solution for you may be to use an application like Audiobook Binder or Audiobook Builder to merge your files, join them and convert to m4b, add in title and author, and import them into iTunes into the Audiobooks section. In addition, Audiobook Builder at least, will let you create chapter markers for the files you join. I think that Audiobook Binder is open source and free (haven't tried this one myself). Audiobook Builder from Splasm is shareware and lists for $9.95. It has a very simple GUI interface, where you point to the files you want to import and join, type in title and author, and you can also optionally join selected subsets of files to make into separate chapters. This works for importing from files in Finder, tracks in iTunes, or tracks on CDs.

You can also do this yourself in iTunes, and it's quite straightforward (provided your files have tags to name tracks and album or artist -- it's still doable, but harder if you have no tags, all files named track01, track02, etc. and only top level folder names for mp3 files).
