I haven't worked with the voice mail setup since I did it the first time, so I can't help you there. As for the voices, you're stuck with Samantha for now I believe. I don't see an option to change the voice. the accessibility button is on the next screen within general. In other words, use the 3 finger flip up to go to the next page in general under settings.
