I don't know of any current tutorial on iTunes and VoiceOver, though I'd guess that some of this may have been covered in the (many) Mac podcasts that Mike Arrigo did on Blind Cool Tech. I just got through posting a reply to someone on the Mac-Access list with a quick intro to iTunes. You're welcome to read it in the Mac-Access archives, but you might want to start at the first posted question and read through the successive replies by using the "next message" link:

The latter post gives my quick intro to the way iTunes is organized. The first post was a way to quickly answer someone who wanted to get a few tracks onto a new iPhone, and who had never used iTunes before, and it's a follow-on to an earlier post that Anne made in the thread. Note that these were not aimed at answering someone with a large, extensive music collection in iTunes, and I also don't remind him to interact and stop interacting as he navigates to the relevant sections of iTunes, since this guy is an IT professional. I also assume that he's read earlier list posts from the previous days about setting up VoiceOver on devices, such as this one (out of a thread):
