If you burn them to CD you can rip the CD to mp3.

Converting your audible books to mp3 is a violation of your customer
agreement with audible. You can burn them to cd, but you may not
convert them to mp3, so anybody giving you advice on how to do that
will be helping you do something not in accord with the audible
agreement. On the mac, you use Itunes as your audible manager
software. there is no separate audible manager software for the Mac.
