Hi COlin, I'm unsure whether someone has answered this already but I thought I'd give it a try. In order to copy text from anywhere, but especially an E-mail, you need to interact with the text. THis is done by pressing VO with shift and down arrow. VoiceOver will beep when text is highlighted. THen you press command C to copy it. I hope that helps.
