I found the solution to sign out of skype while you have it running on the iphone. Once you open skype, in the lower right corner you have a button called my info. Double tap that. If you are running ios4, you should be able to press the home button twice quickly and get into the app switcher.
From there, all you have to do is flick to skype or any other app you want
to shut down and double-tap and hole untill voiceover announces that it's editing apps.
From there, you should be able to double-tap like you're going to open it
but it will shut it down.
