In the accounts section of Mail Preferences there is a "e mail address" field. Setting this will change what happens with replies. Note: some SMTP mail servers (the systems that send mail out) limit what you can place in the from line. Google for example only lets you use your gmail account unless you reply to an e-mail from the non-gmail account to prove that you own the address.
