Eric, Did this ever work for you? If not, then put your Snow Leopard installation disk into the computer when the VM is running. There should be a set of drivers to install. I didn't think these were needed when using a VM, though they are certainly needed in a boot camp version of XP.
If you snapshot that VM before doing the install, then you won't be any worse for wear, since you could always revert back.
