Hi. I can answer two questions.
manual is found on the Apple website. You can buy the sensor and receiver from the Apple Online store. I've never turned Voice Over off so can't answer how to turn it back on. Buy the way you can also buy the heart monitor from the Apple store which works great with Voice over. I've been using all three for a while now.
