If you want a default format to save too, and you are not happy that the default format for pages is pages, then why not use Word? Microsoft Word is the only word processor that has a default .doc type. If you were to use any other word processor you would have to either save as or export. If it bothers you that much, then I suggest you switch to Windows and use Office, or badger Microsoft into making their products accessible for the Mac.
