This task is actually accomplished in the Address Book application.  You will 
create a group, and then you can add the desired contacts to the group.  When 
composing a message in Mail, you only need to type the name of your group, and 
the addresses will be added.  
Creating a new group my be problematic if you're using Snow Leopard.  It can be 
done by turning VoiceOver off, or something like that.  There are others on the 
list better qualified to describe the process.
