Hello Trahern,

There isn't much you can do directly from a PDF document, But if you can select 
text and copy it into a TextEdit document, you can use the command "Add to 
iTunes as a spoken track".

You need to make sure that this service is available by selecting text in a 
TextEdit document, then going to the Services menu where you should find this 
item. If not, go into System Preferences and Select Keyboard. Choose the 
Keyboard Shortcuts tab and select Services in the first table. In the second 
table, make sure that "Add to iTunes as a spoken track" is checked, and you can 
set a shortcut for it while you're there.

Once you've created all the sound files for a given document, use either 
Audiobook Builder or Audiobook Binder to create your audio book.
