Hello William, I've never used Windows or JAWS and don't know MS Office, but in Pages, in the Insert menu, there is "Sender Field" which has a submenu. The submenu contains options such as Name, Address, E-mail, Phone, etc. And these too have their submenus. Is this what you're looking for?
You can set a keyboard shortcut for any item that appears in a menu.
