Hello Everett, To select a colour in Pages, press Cmd-Shift-C and select the third button, Color Palettes, in the toolbar.
Navigate right to the popup menu to choose your palette. Apple is the simplest, but the others can be fun, too. Just interact with the table and use VO with the arrow keys to choose your colour. You can check your selection with VO-F6. The selected colour will be applied to the paragraph where the text pointer is located, or to any text currently selected. You can switch between the text window and the colour palette with Cmd-accent sign to get to the text window, and Ctrl-F6 to get back to the colour palette.
