Running the Skype 5 stable version, I notice that, if someone calls me and then hangs up, ending the call, the *NEXT* call I get is plagued with a clicking, cutting-out over-compression problems, so that my caller can't understand me. Quitting and relaunching Skype seems to resolve the problem. This leads me to believe this might be something other Skype 5 Mac users are experiencing... ANybody? :)
