Hi,

There is enough information at developer.apple.com on OS10 and IOS development 
to keep you busy for the rest of your life.  A good way to get started is to 
read the Cocoa Fundamentals Guide at: 
http://developer.apple.com/library/mac/#documentation/Cocoa/Conceptual/CocoaFundamentals/Introduction/Introduction.html.
  From the intro page, there is a link to a book on objective C.
