Hello Ray, I've never used special characters from the menu, but I can tell you where to find a lot of the accent signs.
When you apply an accent to a letter, make the accent first, then type the letter. Acute: Option-e; Grave: Option-accent sign; Circumflex: Option-i; Diaeresis: Option-u; O-e diphthong: Option-q. Try experimenting in TextEdit, say. That's what I do when I want to find a special character since Keyboard Help doesn't announce characters created using the Option key.
