Hello Georges, To change the language and keyboard, go into System Preferences and select the Language and Text pane.
To change the language, select the first tab, Language then use the Option key and up arrow to move your chosen language to the top of the table. To change your keyboard layout, select the Input Sources tab and check the keyboard layout you want in the table. You can check several keyboard layouts and have them shown in the Status menu so that you can change layout easily.
