There is a preference item or two about picking the account. THere will also be a pop-up button that you can arrow through to change the From: field. If you have not checked the only use the specified SMTP server for this e-mail account check box in the account preferences then there will also be a pop-up just after the "From:" pop-up that lets you select the outgoing mail server to use.
I have written a few messages to this list about the SMTP settings which are a bit hidden when accessing them from the preference pane.
