how many processor cores do you have? if you have 4 cores, give windows 7 2 cores; it'll speed it up nicely. also, with only 2GB ram dedicated to the vm, I'd use 32 bit windows 7. other than that, not sure what to suggest; it works fine here. unless you have some really huge apps installed under windows...
