Easy.

1.  Focus on the file for which you want VLC to be the default player.

2.  Now, press command+F5.  The info window will open.

3.  VO+right arrow until you hear, "open with".  

4.  Here, you will see a pop up button.  VO+space on this.

5.  Now, from the list of apps, choose VLC.

6.  Now, VO+right till you hear "always open with" and check it.

8.  A dialog will pop up asking whether or not you are sure.  Say yes to this.
