Hello Joshua, I can't help with training resources, but the foreign sounding text in the templates in Pages is a kind of dog latin used to fill up the text areas. As soon as you start overtyping one of these areas, the strange text disappears to be replaced by your own.
I haven't had much luck working with templates, but then again, I haven't spent much time on them either.
