IOS handles it automatically so long as the text encoding is done appropriately. It does not seem like that the lion can do it. What I have done was to create an activity and specify the speech synthesizer of the language along with a webkit so that, when I open safari, for example, it reads in English voice while the selected voice is being used when webkit was fired up. Better than manual change. Regards.
