While it is true that you can add ePub files to your iTunes library and sync 
them to iBooks as Jared describes,  you can also import ePub books into iBooks 
in a number of ways that do not involve using iTunes or syncing your device: 1) 
double tap on a download link to an ePub book on a web page in Safari, 2) mail 
the ePub book to yourself as an attachment and open it on your iOS device, 3) 
put ePub files in your Dropbox, MobileMe sharing, or other such cloud service 
sharing and use the corresponding free iOS app.  In the first two cases when 
you activate the link or attachment, you'll be given two options: there will be 
one button to "open in iBooks" (or whatever your default app is, based on last 
use) and another to "open in" which will give you a list of all other 
compatible apps on your device to choose to open the file.   For example, on my 
iPod Touch the latter options might include Filer (a general file download app 
that accepts and reads/plays many file formats), Stanza, Kobo books, OverDrive, 
and other eBook reader apps.  You could also place ePub files into a Dropbox 
folder, or use your MobileMe iDisk space.  Then you can either email yourself 
links to the file location in Dropbox or MobileMe, and when you double tap the 
links, you'll get the same screen with the name and size of the ePub file and 
the two buttons "Open In…" and "Open In (iBooks or some other default app)", or 
you can use the Dropbox app to navigate to these files.  When you use the free 
Dropboxapp on your iPhone, iPod Touch, or iPad to access and open the file, 
it's a two step process to select the file and then select the open option, 
since the Dropbox app will give you a message like "psychobox dimmed" "Unable 
to view file. This file type cannot be viewed. Arrow button."  This just means 
that dropbox does not support viewing ePub files within the app.  On an iPhone 
or iPod Touch, just double tap the "Export" button in the bottom right corner 
of the screen. (This is also the last element of the screen, so you can 
navigate there with a four finger tap on the bottom half of the screen).  
Double tapping "Export" will give you a list of all the apps on your device 
capable of opening an ePub file, and that will include any eBook reader apps 
like iBooks, and file downloading apps.  On an iPad, you would double tap the 
"Action" button in the top right corner of the screen to get a pop up list of 
your "Open In…" option apps for exporting.

The above descriptions do not depend on whether you use Windows or a Mac.  
However, I'll just add that on the Mac I've been finding it convenient to 
transfer files using links to my MobileMe account and an app called FileChute 
by Yellow Mug software.  This is a Mac Application that provides a nice way of 
managing the sharing of large files through email links. There's a free trial 
download, but I'm not sure whether this is compatible with Lion.  I'm cc'ing 
this to the macvisionaries list, so the information can easily be found in 
archive searches using the Mail Archive site.
