Assuming things haven't changed much, the problem in the past was that the mini attempts to detect the monitor relentlessly when not present causing general system slowdowns, stalls and VO busy messages. So for a real-time recording and effects app like Garage Band I suspect you'll always have problems until you have a monitor or do the VGA to NTSC adapter trickery.
