If you still have the fusion 3 disk image there is an app you can use to uninstall it, though I don't know if that's required. Then just copy the new version 4 app to your applications folder, when you open it, you can enter the new serial number. When you open the virtual machine you have created from the library, it will offer to upgrade it to version 4, no need to recreate the virtual machine from scratch.
