Hello Matthiew, Placeholder text is text that disappears as soon as you start typing over it. It's used to show the layout of a document.
When creating templates, I make all replaceable text, placeholder text, but I enter it in the format that should be used. So, for instance, in a template for an APA-style document, I give examples of the various formats for references, and the user can navigate into this text which is then highlighted, and copy it into another document where it can be referred to. The creators of the included templates put fake Latin as placeholder text.
