Its probably too late now, but no, I really wouldn't do that if I were
you. iTunes isn't always 100% truethfull about what its doing & what
stage its at in the process - e.g. It says its restoring the firmware
when its actually upgrading it, so I really wouldn't feel confident
enough to remove the device half way through an upgrade.
You could be lucky though, but if not, you'll probably have a broken
phone until you can restore again.
