At least for the first question, my voice memos show up in iTunes with a
name that has the date/time and the album is "Voice Memos". They come in
as AAC audio but you can easily convert them, or any track, to mp3. Just
make sure you have the mp3 encoder settings the way you like it in
iTunes preferences, select the 'tracks' you want to convert, and then
choose Create MP3 Version from the Advanced menu. If you choose another
type of encoding in the preferences this menu will change to Create XYZ
version where XYZ is the encoder you have picked.
