if you set it up in the iPhone as imap, it should be fine.
Just know that the messages she delete in the iPhone, will probably delete the 
ones' in the servers too. Unless if you change the configurations. But I am not 
sure of the imap limitations on the phone.
I use imap in all my computers and mobile stuff, that way once I read in one it 
shows read in all of them.
If she had already downloaded the message to the pop account, then deleting 
them in the server would not matter, but if she does before downloading on the 
pop account,  then the  outlook would not be able to retrieve that particular 
message.
