Hi Garth, 

The journalling app I personally use is called MacJournal by Mariner Software. 
The app itself is very VoiceOver accessible and it does have both iPad and 
iPhone companion apps. As well as writing text entries, you can record audio or 
video to go with your entries, create multiple journals, password protect each 
journal and, if you wanted to share them, you can post to some of the popular 
blogging sites such as LiveJournal and Word Press directly from within the app. 
The iPhone compatible version only allows posting of text only entries at this 
stage, but it is possible to sync with your Mac if both devices are on the same 
wireless network. 

I can't vouch for the editing of entries on either of the companion apps as I 
tend to just use them for reading entries on the go if necessary, but having 
had a quick look at the iPhone app again this morning, it does look reasonably 
accessible. 

I've been using MacJournal on my Macbook Pro since virtually the day I got it 
just over a year ago and it's one of the best apps I've ever purchased. I can't 
recommend it enough. If you visit the Mariner Software website, you can also 
download a free trial to see if it will meet your needs.

I also own Mac Gourmet Deluxe by Mariner Software and that is also very 
VoiceOver friendly.
