I'm not quite sure what you want but I just ignore the RTF features of
TextEdit and use it as a plain text editor. In Preferences I have it
set to default to plain text for New Documents. Command K isn't
available at all in plain text mode.

I use Vim and markdown in nvalt as my main editors at the moment though:
