I would guess that this metadata is not being changed because it is inheriting 
the Info you have within your iTunes Library database.  The idea is that your 
Library DB is stored in iCloud and only music from your Library that cannot be 
matched from within Apple's iTunes collections is moved to iCloud.  Therefore, 
however you have the item tagged is how it will stay.
