Just grab the whole iTunes folder from your current drive and copy it to the external. Then hold down the option key when you launch iTunes to make it ask you where the library is. Point it to your new copy on the external drive and you're done. After that you can toss the old iTunes folder that you copied into the trash. Note that if you don't have your external hard drive and you launch iTunes it won't be able to find the iTunes library and will revert back to your internal hard drive. Then the next time your external drive is hooked up again you'll need to re-point iTunes to the external iTunes folder. There was discussion of work arounds previously on this list if you are concerned about having to re-point iTunes when the external drive is not present.
