I didn't think there were any profiles on an IOS device.  I've used
the Braille display and the touch screen interchangably quite often
with no problems.  But I never typed on the RB and then continue on
the touch screen but I've used some of the touch screen gestures on
the iPod and then read output on the display.  I've also used the
navigation arrows on the Refreshabraille and mixed with some flicks on
the touch screen with no problems either.  the main thing I was
interested in would be to be able to put the iPod away - in a bag or
something and then just use the Braille display; I guess disabling
auto lock is the ticket then.
