An doing this will record the activity that is on your screen, meaning, if I
were to upload a tutorial using this method, they would see me doing
something on the screen but not hearing voice over or me right?

In Quicktime either  open the File Menu and click on New Screen Recording or
press command , control, N.
        From there your cursor should alread be on the start recording
button. Once you press that you will need to click the mouse to actually
start it. I recommend messing with this a few times to get a feel for it.
