Hi, yes, you would use iTunes to transfer your documents created in pages to your Mac with iTunes. May I suggest trying the Notes app that came on your touch? This might meet your needs, and you wouldn't need to pay the $10 for the pages app. Especially saince you said you just want to keep a simple diary.
