Glad to hear you may be joining the world of the mac!
For application shortcuts, just look in the menus (ctrl-option-m) and note the ones you will use. Once you memorize those, go back and look for more. There are a lot in some applications, but, just like Windows, you will eventually find them to be second nature. Also, some are similar to windows, excetp you use the command key in place of control For instance, cmd-n is almost alway new (mail message, document, whatever), cmd-o is normally open, and so on.
