I haven't used Bean but some apps, like TextEdit, have preference
settings for the default font. Also, I thought there used to be a trick
that if you had no documents open but the app was running, changes made
would become the default. I wasn't able to reproduce this with TextEdit
but maybe Bean does it this way.

and VO-right arrow to change font, but it does not appear my changes
are accepted when relaunching the application.
