Hi Chris. It sounds like you should be interacting with the body of the text, and maybe you interacted with the heading. I gather you are in Mountain Lion. I had more trouble with Lion with Pages.
Also, when you want to find items sometimes the item chooser is your best bet. Try typing control option i and down arrow through the list. If you just want to italicize text or make text bold, you can select the text you want and then press command b for bold and command i for italics. There are some more direct commands that would not require you to go to the menu. Anne is our Pages expert on this list.
