I haven't done this but found a page talking about some ways to do it here:

They seem to say the Headset Buddy will basically break out the in/out connections on the headphone jack into two separate plugs. Then you can run audio into one of those. For apps they reccommend TwistedWave and iProRecorder. I would think GarageBand would work, at least if you're on an iPad.
