Hailes it There is no way that is recommended by Apple or anybody else that works with voice over to rename documents on iOS device. However, there is a way that I got to work wants. Maybe it'll work for you. I don't think it's supposed to work, but here it is. If you Use the two finger double tap and hold option, which is used to rename buttons, it sometimes works.
