Even if you have iTunes Match, you are not forced to stream music over the internet. You can have iTunes Match turned on in iTunes in your computer, but have them turned off in your devices. If they are turned off in your devices, you will still sync them from your iTunes just like you normally do. The advantage of having iTunes Match in iTunes is that any songs you add to your library, iTunes will check and see if it has a higher quality version available. If it is available, you can remove your copy and download the higher quality version from the iTunes Store. Or you can still keep your version if you choose to.
