I have the same question. I'm not sure you can, I think that you can only rename regions, and so the first region on the track is the track name? Doesn't sound right does it.
Though, when you create a software track and assign an instrument, isn't the instrument the track name? Also, when dropping a loop into the timeline, GB seems to create a new track containing the loop, and named after the loop.
