I don't remember if the interface in Snow Leopard works the same. However,
assuming it does.

1. Open Mail and be in your inbox.
2. Go to Time Machine in your Dock and choose, OPen Time Machine from the
context menu
3. Wait until it accesses your backups with that odd sound you will here
repeated for a bit.
4. Use the Window Chooser menu to select, Time Machine Controls
5. Navigate to the vertical slider, interact and go back to the desired date.
6. Stop interacting and then use the Window Chooser menu to select the view of
your inbox from that date.
If it's what you want, go back to the Time Machine Controls and select,
Restore. In Mail, you will find a mailbox that will be named something like,
import, and the date you had chosen.

Again, I haven't used SL in quite some time, so I don't know if the
interface works like this with VoiceOver
