If your writing an email which you don't wish to send, this isn't an option. Also, not everyone, myself not included like having the new file save functionality since Lion/Mountain lion. I do agree with you that it's great to be able to have multiple documents open, close an app and open it again later to them all being there. Doesn't mean it's the best for all or the safest in some situations how ever.
