Go to the recordings list and double tap the "more info" button next to the memo to rename. Double tap its current name (right after the heading) and you'll get a list of names; double tap custom and you can enter your own name. By the way, don't make my mistake and use dictation while entering the name. When you double tap with two fingers to stop dictating, the app actually starts recording a memo and dictation is still running. Once I got it to stop, the app crashed.
