From what I've read in other forums trying to extract MKV stuff and
re-encode it sounds like a big bag of hurt. Apparently the formats for
both the audio and video inside mkv are not supported natively on OSX
and there are no known plugins to do so. So even if you manage to
extract the audio and video out you'll have to re-encode them and then
combine them back into a single video file. A non trivial process. From
what I can tell, VLC implements its own playback engine that doesn't
rely on the platform (Mac, Windows, Linux etc) for anything which is why
you can use it to play mkv files on the Mac without conversion.
